“I must admit to being surprised when we had a sudden rise in questions about sustainable food sourcing, but it was great to see our guests’ reactions when we explained how we grow or otherwise get ingredients. For example, I hadn’t heard the term ‘locavore’ or much about the local food mile diet movement until several guests mentioned it, and then thought, ‘hey, this is what we do naturally’. I started reading up on it and realised what a healthy trend it is,” she said.

In order to survive in the increasingly competitive tourism industry, even the most remote resorts must pay careful attention to their kitchens as travellers are placing greater emphasis on a quality dining experience, the food and beverage manager of a popular Belizean eco resort advises. Bryony Fleming Bradley, of The Lodge at Chaa Creek in western Belize, said that the days of adventurous travellers being satisfied with food that was simply hot and palatable are over. ”Some years back, our guests would always comment at how happily surprised they were with the quality of the food we served, as it usually exceeded their expectations of what would be found in such a pristine location.

“Chaa Creek sits within a 365 acre private rainforest reserve, and with all of the activities and amenities on offer, we really are a destination within a destination. And, with over 30 years’ experience and close relationships with other resorts, tour companies and service providers, we can design and deliver packages that really are exceptional,” she said.
Rather than misinterpreting Maya beliefs to falsely predict the end of the world, researching and practicing ancient Maya medicine and natural healing techniques can open a new world of health today, noted author and Maya medicinal plant expert Dr. Rosita Arvigo advised participants at Chaa Creek’s 2012 Maya Winter Solstice celebrations.
Ms Fleming said that people from around the world have been converging at the Belizean eco resort for days of educational workshops and hands-on training in Maya skills such as tortilla and chocolate making, thatching with jungle palm fronds and the use of medicinal plants in preparation for the grand ceremonies that will take place on the evening of December 21 2012.

It was late Sunday evening when I noticed missed calls and text messages on my cell phone. I was amazed at the news I received and walked downtown to see it for my own eyes. What was happening? Archaeology in action on what I believe to be the busiest street in San Ignacio! AWESOME was the word that came out of my mouth. As an archaeologist, I never pictured excavations to be carried out in front of one of our regular hanging out spots!!! For years we had been travelling outside of town, not knowing that underneath our feet lay a SURPRISE waiting for us!
Belize’s Chaa Creek was one of the top choices, with a description that read:
Nestled in the rainforest, this eco-friendly resort offers nature-loving families the opportunity to immerse themselves in well-preserved beauty and a different culture. Guests can focus on land-based activities, like horseback riding among Mayan ruins, or choose elements of surf and turf with the Jungle & Sea family package.
Since I accidentally stumbled upon your web-site recently, I have become fascinated and enamored with both the country of Belize and your inspirational eco-resort Chaa Creek. I’ am not a true believer in chance happenings, so naturally I think Belize and I are destined to meet, and this sweepstakes has given me a unique opportunity to achieve that desirable fate. Newly engaged, my fiancé and I have been looking for that perfect honeymoon destination, and perfect is exactly how Chaa Creek looks and sounds to us.
Belize is a nature lover’s paradise. Beautiful scenery, rainforests and beaches. Amazing native birds and animals. The climate of Belize is near perfect. Belize is home to wildlife reserves and sanctuaries, rivers, herbal trails, massive Mayan ruins and ancient pyramids that are still among the tallest structures in the country today, and a massive system of subterranean caves. With approximately 40 per cent of land classified as protected, the forests support a vast range of wildlife including five large cat species – margay, jaguarundi, ocelot, puma and jaguar. Bird life is also abundant with over 500 species recorded.

My aunt and I stayed at Chaa Creek for 3 days in March 2010 as part of a package arranged by Worldwide Ecotours and my local travel agent. Our every need was looked after – the Lodge arranged return shuttle transfers from the airport, tours of Actun Tunichil Muknal and Caracol with expert guides, and made sure that we could both get into the spa at the same time for some much-needed massages. The service at …
