In Belize, like in many places in the Caribbean, fishing is synonymous with a way of living. Some divers use hook sticks to mostly catch lobsters within the extensive inshore reef habitats, while others use wooden traps and “casitas.”

Both methods are effective and contribute to the country’s exportation and the daily consumption of the favoured crustaceans.

Summer Festivals: Lobster Fest

The Spiny Lobster Season is set to open on July 1st, 2023. This means there will be grilled, steamed, and even broiled lobster all set to be displayed at the Lobster Fest in San Pedro from July 4th to July 15th and, at both Placencia and Caye Caulker from July 14th to 16th, 2023.

Bring the Caribbean Home: Sharing our top Lobster Recipe

Suppose you are away from the country to catch these Summer Festivities. In that case, we recommend trying remarkably easy to follow Lemon Butter Garlic Lobster with sauteed Veggies and white coconut rice provided by The Chefs The Guava Limb Café: 

Ingredients for Lemon Butter Garlic Lobster with Sauteed Veggies: Portions for 2 

– 2 Spiny Lobster Tails 

– 3 Limes 

– 1 Stick of Butter 

– 3 Garlic Cloves 

– Chives/Cilantro/Parsley 

– Coconut Oil/Coconut Milk 

– Salt

– Pepper 

– Carrots/ zucchini/ eggplants/ bell peppers/ onion/ 

– Olive Oil 

Preparation: 

Lobster Tail: Clean and wash properly to get it ready to be grilled 

Sauce: 1 freshly squeezed lime with a pinch of grated zest, three tablespoons of melted unsalted butter, two medium size garlic cloves (minced), three bits of chopped chives, parsley, or cilantro (herb of choice) 

Rice: Blend cilantro and coconut milk with water. Add blended ingredients to the rice. 

Sauteed Vegs: Thinly slice the carrots, onion, eggplant & bell peppers. 

Cooking: 

Lobster Tail: Once grill is hot, place the Lobster tails face first to get grill marks, and then turn around and apply the prepared sauce with a soft brush. Continuously flip for 10 minutes. 

Sauteed Vegs: Once the skillet or frying pan is heated, add ½ teaspoon of Olive Oil and start adding carrots, bell peppers, onions, zucchini, and eggplants with a pinch of salt and pepper. Sauteed Veggies for 3-5 mins on a medium temperature. 

Rice: Cook rice in a pot for 20 minutes. Add water and blended cilantro & coconut milk with coconut oil and stir-fried garlic clove. 

Ensure everything is cooked to your liking, and enjoy this delectable meal.
