The most easterly of Belize’s three atolls, Lighthouse Reef lies 50 miles southeast of Belize City. One of my first happy discoveries about Belize was how wonderful and varied the food is. Generally inexpensive, dining in Belize is a treat. In July, the Flavors of Belize cookbook was launched at the Biltmore Plaza with a grand cocktail that featured sampling from several cooking stations of cultural cuisine from the recipe book. Locally, the book has been well received and its Publisher, McNab Designs is in the process of launching it in the U.S. But while that is in the pipeline, at this hour, McNab Designs is putting off an exhibition at the Image Factory to coincide with the national celebrations. Tanya McNab says there’s a recipe for everyone.

WE were hiking through the woods of the Cockscomb Basin Sanctuary and Jaguar Preserve in Belize, the more-than-150-square-mile verdant reserve that is a no-hunting haven for many species of this hemisphere’s wild cats — the puma, ocelot, jaguarundi, margay and jaguar. As we moved along well-tended trails, there were signs of activity — muddy paw prints by a riverbank, bits of jaguar scat — but we were unlikely to actually see any of these magnificent creatures.

Mick Fleming is something of a legend in this part of Belize, a larger-than-life character who, more than 30 years ago, with $600 in his pocket, made his way to Belize City, where he met a guy in a bar who owned a piece of land in the jungle he was interested in selling. Mick bought, thinking he’d try his luck as a farmer. The farming was tough going, but, in time, Mick identified another opportunity. Travelers were beginning to find their way to this remote region. They’d happen upon Mick and ask if he had a place where they could spend the night.

This visit and the Masterclass shows how dramatically new media and social networking has changed the face of communications and global marketing. Just a few years ago, Belize would not be attracting speakers of Mr Meerman Scott’s calibre. We simply wouldn’t have had the budget or the reach to attract the attention of people like him.
